xcuse my dimness but what is a hacked server ,and why/who would want/need to do it,

An exploited or hacked server is one that is no longer fully under the control of its owner or operator. Someone else is partially or fully controlling the server and using it for their own purposes.  
 
Here are some common reasons to exploit a server:  
 
• Sending out spam email.  
• Launch attacks against other servers, thus consuming your servers CPU, Memory, and Bandwidth Resources.
• Install a phishing website on your server to gain access to sensitive information such as usernames, passwords, email addresses or credit/bank card information.
 
Why would someone want to do it? It could be that the site is valuable to it's owner and it's costing them whilst it's down or compromised, or the information thats held on the server is valuable ie credit card numbers, etc.
 
Theres the other reason - because they can or are trying to prove a point, a show of strength or power against the hacked site/server owner.
 
Just in case you're not sure what a server is, it basically is something you connect to when you do anything on the internet. This site lives on a server, your email lives on a server, etc.
